In most eBooks I cannot change the fonts. Only the page number text font change, but the book text does not.

In some books everything works OK.

What is wrong? How do I fix this?

For ePub books, the publisher who created the book can choose whether to use the font you selected on the ereader, or their own font, or a "generic" font such as serif or sans-serif. On current Kobos, in English language books at least, the generic fonts are Georgia (serif) and Avenir (sans-serif).

Some publishers are good and only force the use of their own fonts for things like headings, allowing their font choices to be overridden by the font selected on the ereader for the main text. Other publishers are high-handed and try to force their choice of fonts to be used for everything.

For ePub books, if the publisher has chosen to force the use their own font or a generic font, then the only way to change that is to edit the ePub before you sideload it. One way is to edit the book's CSS stylesheet so that the publisher fonts are only used for headings but not for ordinary paragraphs, another is to use a tool like Calibre to strip the embedded fonts from the ePub or the font-family styles from the stylesheet entirely.

Another option, if you use Calibre, is to convert the book to KePub (Kobo ePub) format. KePubs are displayed using different ereader software which doesn't allow the pulisher to override the font selected on the ereader. (Also if you buy the book from Kobo and sync directly to the ereader it will be in KePub format.)
